Ingredients
  

For the Cookies

  • 1 cup 1 cup (2 sticks / 226 g) unsalted butter, softened
  • ½ cup ½ cup (100 g) granulated sugar
  • 1 large 1 large egg yolk
  • 2 teaspoons 2 teaspoons vanilla extract
  • 2 cups 2 cups (250 g) all-purpose flour
  • ¼ teaspoon ¼ teaspoon salt

For the Caramel Filling

  • 20 pieces 20 soft caramels (about 140 g)
  • 2 tablespoons 2 tablespoons heavy cream

For the Chocolate Topping

  • 4 ounces 4 ounces (115 g) milk chocolate (or semi-sweet, chopped)
  • 1 teaspoon 1 teaspoon vegetable oil or coconut oil (for shine)

Optional Garnish

Instructions
 

Preparation

  • In a large mixing bowl, beat the butter and sugar together until light and fluffy, about 2–3 minutes.
  • Mix in the egg yolk and vanilla extract until well combined.
  • Add flour and salt. Mix just until the dough comes together. Be careful not to overmix.
  • Roll the dough into 1-inch balls (about 1 tablespoon each). Place them on a parchment-lined baking sheet. Press a small indentation in the center with your thumb or the back of a measuring spoon.
  • Chill the cookies in the refrigerator for 30 minutes.

Baking

  • Preheat your oven to 350°F (175°C).
  • Bake the chilled cookies for 10–12 minutes or until the edges are lightly golden. If the centers puff up, gently press the indent again right after baking. Let them cool completely.

Filling and Topping

  • In a small saucepan, melt the caramels and heavy cream over low heat, stirring until smooth. Spoon a small amount into each cookie indentation and let it set for 10–15 minutes.
  • Melt chocolate and oil together in the microwave using 30-second bursts. Drizzle or spoon the melted chocolate over the caramel centers.
  • Before the chocolate hardens, sprinkle finely chopped Twix pieces or chocolate shavings on top for an extra treat.

Serving

  • Let the cookies sit until the chocolate sets completely before storing or serving.

Notes

Ensure your butter is softened properly for the best texture. Don't skip chilling the dough; it helps maintain the cookie shape while baking. For a richer chocolate flavor, you can use semi-sweet chocolate instead of milk chocolate. If you prefer a less sweet option, use dark chocolate for the topping.
